I remember when moringa became a craze in my part of town in Accra. Every health shop and activity somewhat had moringa as part of different medicinal procedures. It was so absurd. We even had a big moringa tree planted in our compound by an uncle years ago and was now gaining recognition. We had neighbors trooping into our house often to have a few stems of moringa leaves for different uses. You can imagine our home becoming an item of admiration.
Out of these happenings, my curiosity to explore the trees offerings began. My colleagues husband had started a thriving moringa business and was making headway in the city. It was the right time for me to know this plant better too and explore the many ways that I could use it as a recipe developer.
This cookbook is an excerpt from the many tasty dishes that I have made using moringa from over the years. For the sake of space, I limit the recipes to thirty of them here, but I make sure they cover different meal types to last you for days.
